Cheese

I made cheese!!!! This time, using rennet!

I am excited :)

I have used the “1 Gallon, basic hard cheese” recipe from
http://biology.clc.uc.edu/Fankhauser/Cheese/Cheese.html
And 1 gallon milk yield 550 - 600 gr (1.1 - 1.3 lbs) of milk.

Vegetable Pie

When you have only one zuccini left, this recipe might come to rescue! Very easy, you can make it in 20 mins or less. Make sure to add the baking and cooling down time in your schedule as it needs to cool down to settle.

Even though I called it a vegetable pie, and all the ingredients are vegetables, there are times that I put choppes beef sausage in there to spice it up. Just depends on what you have in the fridge that day.

What you need:

Pie crust

  1. 1 1/4 cups flour
  2. 1/3 cup shortening
  3. 7 - 8 Tbs ice water

Filling

  1. 1 medium size zucchini, chopped
  2. 1/2 onion, chopped
  3. 4 - 5 cloves of garlic
  4. 1/2 - 3/4 can of corn
  5. 5 Tbs yogurt
  6. 1 egg
  7. 2 Tbs olive oil
  8. 2 Tbs chopped dill
  9. 2 tsp crushed red pepper

How you make it:

  1. Make ice water by putting a few ice cubes and 1/2 cup of water into a little bowl
  2. Put the flour and shortening in a bowl, and start adding one Tbs of ice water at a time and mixing well using a pastry cutter or a fork & knife combination. Add as much water as it takes to make sure the mixture is moistened
  3. Dip your hands into the cold water, and make the dough into a ball shape
  4. Roll the dough into a circle, on a lightly floured surface
  5. Put the rolled dough into a 9inch pie pan. Do not stretch it, but do not worry about the patches either. Mine never looks perfect, but I do not care about that as I am about to cover it with lots of veggies!


  6. Add the zucchini, onion, garlic and corn (or whichever vegetables you chose.) If you choose to add sausage, this is a good time to add it as well


  7. In another bowl, mix the yogurt, oil, egg and the spices
  8. Pour the egg + yogurt mix over the vegetables


  9. Bake in the 350F oven until it is brown, for about 30 - 40 mins

Before diving into it, make sure it cools down to set.
