Mixed Salad w/Garbanzo Beans & Nasturtiums
April 5th, 2005

After a long day at work, when I do not want to cook anything (which is a rare moment!) I tend to look into the pantry to see if I can make up anything. It was one of those days when we put this salad together. Was also a great excuse to go out and grab fresh vegetables from the garden as well. Since the weather is not hot enough, I still could not plant the tomatoes, but the lettuce, scallions, radishes and parsley were all happily growing.
And the nasturtiums! These wonderful edible flowers grow like crazy when you plant them in a sunny location. Thanks to our neighbours Louise and John, we also planted some this year and now enjoying them in the salads. Hope to garnish more salads this coming summer… A hint from John: try picking them before they open; they are the most delicious then.
Here is a list of ingredients, I am sure there is no need to explain how we assembled it. :)
- 1 can of garbanzo beans
- 2 tomatoes
- chopped parsley, a handful
- fresh lettuce leaves, 2 handfuls
- 3 - 4 radishes
- 4 scallions
- juice of a lemon
- 2Tbs extra virgin olive oil
- salt to taste
Enjoy!

Enteresan bitkiler; dikkat, ozen istemiyorlar nedense! Sonra da actikca aciyorlar.

[…] These flowers are edible as well, in case you have them in your yard. They go really good on salads. […]
