Banana-Apple Bread

You see two bananas turning black on the kitchen counter, think about making banana bread but you also know that that’s not enough. So, what happens next? What about an apple sitting next to them? This was my thought process when I decided to make use of those bananas and the apple. Peeled them, mashed them and mix them with a grated apple to make the fruit content of the cake. The combination was quite pleaseant actually, that might be how I will make the `banana’ breads from now on.
What you need:
- 2 very soft bananas, peeled and mashed
- 1 apple, grated
- 1 1/2 cups of all purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp ground cinnamon
- 1 egg
- 3/4 cups of sugar
- 1/4 cup extra light olive oil (or cooking oil, if you prefer)
- 1 tsp finely shredded lemon peel
- 1/2 cup chopped walnuts
Steps to make it:
- Grease the bottom and sides of an 8×4x2 inch load pan, set aside
- In a medium bowl, mix all the dry ingredients but the sugar, set aside
- In another bowl, mix the egg, banana & apple mixture, sugar, oil, and lemon peel
- Add the egg mixture to the dry mixture at once, and stir till moistened. Batter should be lumpy. Fold in nuts
- Spoon the batter into the prepared pan, bake in 350F oven for 50 - 55 mins — until it passes the toothpick test
- Cool and wrap. Store overnight before slicing for breakfast

Note: This recipe is adjusted from the “Better Homes and Gardens — New Cook Book. ” The original recipe called for 1 cup of mashed bananas, my mix was a bit more than that which turned out to be great.

made some changes like substituting half the flour with whole wheat flour, adding one more egg & reducing sugar to half cup.
overall a wonderful recipe…loved it.
