Cranberry – Raspberry Relish

This delicious recipe is from Louise, my neighbour.
Cranberries remind me of cornellian cherries that I used to eat until I get stomach ache. As a child, that was one my favourite late summer treats and my favourite jam is made out of them, too. But, this recipe is made with cranberries, I should not forget this!
The first time I ate this, I loved the tartness of the blend. Later when I asked Louise how she makes it, she said “all you do is chop and mix them together”; no cooking involved! If you have access to the ingredients, I suggest you try this out. Also, keep in mind that it keeps well for about a month in the refrigerator as long as you keep in an airtight container.
Ingredients
- 1 (12 ounces) package of fresh cranberries, finely chopped (I use my blender to do this)
- 2 tart green apples, peeled, cored and diced
- 3/4 cups sugar (1 cup, if you like it sweeter)
- 1/2 cup orange marmalade
- 1 (10 ounce) package of frozen raspberries, thawed and drained
- 1 orange peeled well and cut into small pieces
- 1 tsp fresh lemon juice to taste
- If you have fresh raspberries, rinse and drain well and add them as well
- If mixture appears too thick, then just add some more orange juice
- She also suggests adding 1/2 cup chopped pecans
yields 6 cups
Instructions
Combine all of the above ingredients and stir well until well mixed. Cover and refrigerate until serving time
