Tray Kebab

This is a speciality dish from Antakya, Turkey. Some of you may know the ancient name “Antioch” for that city. Definitely tasty and easy to make at home.
For Kebap:
- 1kg ground veal/beef, medium fat
- 2 tsp black pepper
- 1 tsp cumin
- 1 tsp dry mint
- 2 Tbs red pepper flakes (could be used less if you do not like hot)
- 3 bunches of parsley
Topping:
- 1 medium size tomato
- 2 anehaim pepper
- potato, if desired
- 2 Tbs tomato paste + 1/2 cup warm water
Chop the parsley finely, mix with the rest of the ingredients well. Pat the mix to a flat claypot so that it is 3 - 4 mm thick. Arrange tomato and pepper slices (and potato if desired) on the mix. Thin the tomato paste with warm water and pour over. Bake for about an hour in 175C oven. Serve with thin, kebap bread.

Fethiye’cim, ben bu yemegin yoresini bilmiyordum,
ben buna tembel koftesi derim :)) Eve gelince vaktim yoksa eger kofteyi aynen ( nanesiz) yogurup tepsiye bastirip firina atarim, uzerine domates rendesi ilave edip, tek tek kofte yapmiyorum diye de tembel koftesi koymustum adini.
Nasil guzel gorundu simdi gozume sabah sabah, yarin kirmizi et gunum, kofte yaparim diyordum, naneli sekli ile deneyecegim bu kebabi. Ellerine saglik.

I just log trying to found kefir.Well it is my lucky day.I am gonna make that bread and that pancakes for sunday.The dish pictures are mouth watering.

Should the meat mixture really be 3-4 mm thick? It looks much thicker on the picture. You think you can serve this cut in triangles like a piece of pie?
Are Anaheim peppers a sort of large chili peppers?
This dish must be really hot with 2 tbs of chili flakes and those peppers. Which I like.

I feel like I made a mistake by writing 3 - 4 mm, but I think it is true. Just pad it down, as thin as you can Robert. Also, when it is cooked, you can cut it like a triangle for a nice presentation. Anaheim peppers are the green, long but not hot ones. The hotness of the dish comes from chili peppers — and it is a hot dish for sure!
