Ah, finally! What looks like a credible recipe to make boregi! I have wanted to make this for 10 years, since I visited Istanbul, and I am GOING to try this over the holidays this year. I realize it is years since you posted this blog entry, but who knows . . . maybe you will get this and give a response? I am surprised that your aunt does not boil the top and bottom layers before placing them in the baking dish. Do you know if there is a particular reason for this? Have you ever tried boiling them? Does the bottom layer come out firmer or crunchy as a result of not boiling the dough first?

I believe that you left out a step/ingredient for your Su Böreği. Beaten eggs are supposed to be on the top of Su Böreği. In your picture of the sliced Su Böreği i can see that there were eggs that had been cooked on the top.

Oh my goodness! I have been looking everywhere for this recipe. Su boregi is my favorite Turkish food by far, and my husband, Cem, told me I would not be able to make it myself. Ha! Well, I'm pretty handy in the kitchen, so I'm not easily intimidated by difficult recipes, but my experience with rolling pins is limited, to say the least - any news on the pasta machine outcome?
