I have five quince trees here in Western Washington. Always loking for new ideas, but would like to share one of mine. Pineapple/Quince Marmalade. Using 1/2 raw chopped up fresh pineapple, 4 liters ground quince minus cores but with skins on, 1/2 liter cold water, 1 tblsp cinnamon, 4-5 liter sugar. Mix ingrediants in large cooking pot and bring to boil. Reduce heat to simmer and cook for about 1 1/2 hrs. The jam will turn a bright Florantine red when it is finished. Pour into sterilized jars and seal. Process finished jars in boiling water for 10 minutes. You won't be sorry, Jeff
