No Need to Knead

When I saw this, I oculd not stop myself and went to the kitchen and mixed the ingredients, put them in a bowl and calmly came back to my seat. Took me less than 10 mins maybe? And the next day, after work I continued with the rest of the process. Unfortunately it was not ready for dinner, but this morning we had our shares of this bread, talked about the chemistry of letting the dough rise that long etc. Even though kneading the bread has always felt like a threapy for me, there are days I feel quite well, can get around without a need for threapy ;)

I used my Sassafras baker for this, and it worked quite well. Also, during the second rise, I used a silicone mat to rest the dough on, instead of a kitchen cloth.

    Cok ilginc bir yontem. Acaba bu yontem esmer ekmek yapmakta da kullanilabilir mi? Benim ekmek makinemde kullandigim unun %65’ini tam bugday ve cavdar unu olusturuyor, geri kalani ise beyaz un. Bu tip bir karisimda gluten miktari cok az oldugu icin zaten cok kabaran bir ekmek olmuyor, lezzet acisindan mukemmel olsa da. Simdi bu tarifteki gibi cok az maya kullanip uzun sure mayalandirmaya biraksam husranla sonuclanicakmis gibime geliyor. Eger bu yontemle esmer ekmek yapma konusunda tecrubeniz ya da fikriniz varsa cok makbule gecicek. Tesekkurler!

    McAuliflower; I am so glad I read your post on this bread. So far, I have made it many times, with different variations and everytime the result was real good. Adding chocolate would add taste, I bet. Got to try that!
